Caramelized Miso Butter Salmon with Charred Broccolini
If you've never tried miso on salmon, prepare to wonder how you ever lived without it. White miso paste melts into butter with a spoonful of mirin and a touch of brown sugar, creating a glaze that caramelizes into a bronzed, umami-rich crust under the broiler. The salmon stays silky and flaky underneath — it's the kind of effortless elegance that makes people think you spent way more time in the kitchen than you did.
The charred broccolini is the perfect sidekick here. A quick toss in sesame oil and a blast of high heat gives the florets crispy, almost blackened tips while the stems stay tender with a satisfying snap. A shower of toasted sesame seeds and a squeeze of fresh lemon bring the whole plate together.
Serve this over a bowl of fluffy short-grain rice and let the miso butter pooling on the plate become the world's best sauce. This is a 25-minute dinner that punches well above its weight.
Ingredients
- ● 4 pieces skin-on salmon fillets
- ● 3 tbsp white miso paste
- ● 2 tbsp unsalted butter
- ● 1 tbsp mirin
- ● 1 tbsp light brown sugar
- ● 1 lb broccolini
- ● 1 tbsp toasted sesame oil
- ● 1 tbsp neutral oil
- ● 2 cloves garlic
- ● 1 tbsp sesame seeds
- ● 1 piece lemon
- ● 1/2 tsp kosher salt
- ● 1/4 tsp black pepper
Instructions
- 1Position an oven rack about 6 inches from the broiler and preheat the broiler to high. Line a baking sheet with aluminum foil and lightly oil it.
- 2Mash together the miso paste, softened butter, mirin, and brown sugar in a small bowl until completely smooth and combined.
- 3Pat the salmon fillets dry and place them skin-side down on the prepared baking sheet. Spread the miso butter evenly over the top of each fillet, using the back of a spoon to coat the entire surface.
- 4Broil the salmon for 7-9 minutes until the miso glaze is deeply caramelized and bubbling and the fish flakes easily with a fork. Watch closely during the last 2 minutes to prevent burning.
- 5While the salmon broils, heat the neutral oil and sesame oil in a large skillet over high heat until the oil shimmers. Add the broccolini in a single layer and let it cook without moving for 2 minutes until charred on the bottom.
- 6Toss the broccolini, add the sliced garlic, season with salt and pepper, and continue cooking for another 2-3 minutes until the stems are crisp-tender and the garlic is golden.
- 7Plate the salmon alongside the charred broccolini. Sprinkle with toasted sesame seeds and serve with lemon wedges.
