This chilled soba noodle salad is exactly what you want when the weather warms up. Light, refreshing, and packed with so much flavor that you won't miss the heat. Nutty buckwheat soba noodles are tossed with crunchy vegetables and a creamy, tangy peanut dressing that coats every strand. It's the kind of salad that actually satisfies, leaving you energized rather than hungry an hour later. The peanut dressing is the star here, blending creamy peanut butter with soy sauce, rice vinegar, sesame oil, lime juice, and a hit of fresh ginger. It's savory, slightly sweet, and completely addictive. The vegetables, crisp cucumber, shredded cabbage, julienned carrots, and edamame, add layers of color and crunch that make each bite interesting. This salad is perfect for meal prep since it keeps beautifully in the fridge and the flavors actually improve overnight. Pack it for lunch, serve it at a summer cookout, or enjoy it as a light dinner with some grilled shrimp or tofu on top.

Ingredients

  • 8 oz soba noodles
  • 3 tbsp creamy peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 tbsp lime juice
  • 1 tbsp fresh ginger
  • 1 tbsp honey
  • 2 Persian cucumber
  • 2 medium carrots
  • 1 cup purple cabbage
  • 1 cup shelled edamame
  • 2 tbsp toasted sesame seeds
  • 1/4 cup fresh cilantro
  • 2 tbsp crushed peanuts

Instructions

  1. 1Cook the soba noodles according to package directions, usually about 6-8 minutes. Drain and rinse thoroughly under cold running water to stop the cooking and remove excess starch. Shake dry.
  2. 2Make the peanut dressing: whisk together peanut butter, soy sauce, rice vinegar, sesame oil, lime juice, ginger, and honey. Add 2-3 tablespoons of warm water to thin it to a pourable consistency.
  3. 3In a large bowl, toss the cold soba noodles with the peanut dressing until every strand is coated.
  4. 4Add the cucumber, carrots, purple cabbage, and edamame. Toss everything together gently.
  5. 5Divide among bowls and top with toasted sesame seeds, crushed peanuts, and fresh cilantro. Serve cold or at room temperature.
