- ● 4 large Poblano peppers
- ● 1 cup Quinoa
- ● 1 cup Black beans
- ● 2 tablespoons Olive oil
- ● 1 medium Onion
- ● 2 cloves Garlic
- ● 1 teaspoon Cumin
- ● 1 teaspoon Chili powder
- ● 1 cup Cheddar cheese
- ● 1/4 cup Fresh cilantro
- ● 1 whole Lime
Instructions
- 1Preheat the oven to 375°F (190°C).
- 2Roast the poblano peppers in the oven for about 10 minutes or until the skins are charred. Set aside to cool.
- 3In a medium pot, cook quinoa according to package instructions. Set aside.
- 4In a skillet, heat 1 tablespoon of olive oil over medium heat. Add onion and garlic, sauté until soft.
- 5Add the black beans, cumin, and chili powder to the skillet. Mix in the cooked quinoa and half of the cheese.
- 6Gently peel the charred skin off the poblano peppers and make a slit to remove seeds. Stuff with the quinoa mixture.
- 7Place stuffed peppers in a baking dish. Drizzle with remaining olive oil and top with the rest of the cheese.
- 8Bake for 15-20 minutes until cheese is melted and bubbly. Garnish with cilantro and serve with lime wedges.
