Crispy Smashed Potatoes

Ingredients

- ● 3 tbsp olive oil
- ● 2 tbsp unsalted butter

- ● 1 tbsp fresh rosemary

- ● 1/3 cup Parmesan cheese
- ● 1 tsp flaky sea salt
- ● 1/2 tsp black pepper
- ● 2 tbsp fresh chives
Instructions
- 1Place the potatoes in a large pot, cover with cold salted water, and bring to a boil. Cook for 15-18 minutes until fork-tender but not falling apart. Drain well and let them dry for a few minutes.
- 2Preheat the oven to 450°F (230°C). Drizzle a large rimmed baking sheet with olive oil.
- 3Arrange the potatoes on the baking sheet and use the bottom of a glass or measuring cup to smash each one to about 1/2 inch thick. Drizzle with more olive oil and season with salt and pepper.
- 4Roast for 25-30 minutes, flipping once halfway through, until deeply golden and crispy on both sides.
- 5While the potatoes roast, combine the melted butter, garlic, rosemary, and thyme in a small bowl.
- 6Remove potatoes from the oven and immediately brush with the garlic herb butter. Shower with grated Parmesan and flaky sea salt. Garnish with chives and serve hot.
